Damn, my lunch was good! I’d even say: delicious. I’m lucky to have one of those jobs where taking time off for yourself is not only accepted, but is also recommended. And today was one of those flex days and I took the time to took.
Here’s what you’ll need to make this pork filet mignon recipe:
- Pork tenderloin
- An onion
- Several carrots
- A bouillon cube
- Thyme and bay leaves
- Salt and pepper
This recipe is done in two times: first, you’ll be cooking the onions and carrots and then, the meat, altogether with the rest.
To get started, cut the carrots and the onions, brown them with butter in a deep pan and set them aside for later.
Season the pork with salt, pepper and thyme and brown it with butter in that same pan as the vegetables. When it’s got a nice color, add the vegetables back in with some water, a bouillon cube, and some bay leaves.
Bring the heat down, cover the pan and let it cook for 30-40 minutes. Yes, that’s long, but, you won’t be disappointed because it tastes truly delicious. Damn, my lunch was good! And I have some left for tomorrow! 🙌
